My name is Beatrice Aiuto, and I am 28 years old. I got my bachelor’s degree in biology sciences at the “Alma Mater Studiorum” University of Bologna. The curiosity for the food value chain led me to enroll in the “Food Science and Nutrition” Master’s degree at the University of Turin where I had the chance to carry out my thesis at the CNR-

ISPA. This laboratory and research experience allowed me to acquire competencies in 1D-2D

protein electrophoresis, immunoblotting, ELISA assay and basic principles of HPLC, MS

and LC-MS/MS. I decided to get a doctorate in metrology at INRIM (the National Metrology Research Institute) and Politecnico of Turin to advance my career in research. There is, in fact, rising interest in the development of assays that can accurately find trace quantities of allergenic proteins in processed foods.
