Dr. Pérez-Gordo PhD in Biochemistry and Food Science, Associate Professor at the Medical School at Universidad San Pablo-CEU of Madrid (USP-CEU). Since 2018 holds a position as Director of Medicine Degree in the same University. She does research in microbiota, immunology, food allergy and cell biology. Since 2016 her research focused on gut microbiota and its relationship with the acquisition of oral tolerance at early stages of life.
