Cristiano Garino gained his PhD in Pharmaceutical and Food Biotechnologies at the University of Piemonte Orientale of Novara, Italy, on the topic of food allergy. He carried out there his post doc activity, applying molecular biology techniques to food analysis, focusing on the evaluation, characterization and detection of hidden allergens and/or contaminants in foods. After one year spent as EFSA fellow at the Bundesinstitut für Risikobewertung in Berlin, he was hired as research assistant. Currently he works on insects as novel foods and new sources of allergens.
