I obtained a degree in Biology in 1992 (Complutense University, Madrid, Spain), a Master in Brewing technology in 1994 (Technical University Madrid, Spain) and the European PhD degree in Biochemistry in 2001 (Autónoma University Madrid, Spain). I have more than 20 years of experience in protein research, in particular in allergen molecular characterisation and more than 50 peer-reviewed publications. During my PhD studies and later as a post doc and senior scientist at the Institute of Food Research (UK), I focused on the role of allergen structure, and the interactions of allergens with other components in the food matrix, on food digestion and allergenicity. As a European Marie Curie fellow at Salzburg University, I investigated the immunological aspects of allergen specific immunotherapy. Currently I am examining new tools for food allergy treatment and diagnosis, and assessing the allergenic risks of novel foods at the Technical University of Denmark (DTU) as a Senior Researcher.
